Alhamdulillah I made this dish! I hope you can make it too.
Ingredients
- 2 cups day-old rice (cold, for best texture)
- 1-2 kebabs, cooked and cut into bite-sized pieces (remove skewers if necessary)
- 1 cup mixed bell peppers (red, yellow, green), diced
- ½ cup kimchi, chopped
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oil (olive or sunflower) or sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced (optional)
- 1 tablespoon cooking oil (for stir-frying)
- 1 teaspoon sesame seeds (optional, for garnish)
- 2 green onions, chopped (for garnish)
Instructions
Prepare Ingredients
Break up the day-old rice to avoid clumping.
Dice the kebab meat into bite-sized pieces.
Chop the bell peppers, kimchi, and green onions.
Cook the Eggs
Heat 1 tablespoon of oil in a large wok or skillet over medium heat.
Pour in the beaten eggs and scramble lightly until just set.
Sauté Aromatics and Vegetables
Add 1 tablespoon of oil to the same pan.
Toss in the minced garlic (and ginger, if using) and sauté until fragrant (about 30 seconds).
Add the diced bell peppers, the white parts of the green onion and cook for 2-3 minutes until slightly softened.
Stir-Fry the Rice
Add the cold rice to the pan. Stir to combine with the vegetables, breaking up any clumps.
Drizzle soy sauce over the rice and stir until evenly coated.
Add Protein and Kimchi
Mix in the diced kebab meat and chopped kimchi. Stir-fry for 2-3 minutes to warm everything through and blend the flavours.
Final Touches
Taste and adjust seasoning with more soy sauce, if needed.
I was making some chicken in the air fryer and the crumbs that fell off the chicken I sprinkled it on the rice for an extra crunch!
Serve
Transfer to a serving dish and garnish with chopped green onions.
